Eggplant is one of my favorite side dishes because it literally taste like steak. I like to prepare it with basic ingredients: Salt and pepper, olive oil and garlic slices.
Cut the eggplant about 1/2 inch thick so that they don’t turn soggy when you bake it, unless you perfer it that way.
Add olive oil, salt and pepper to both sides and sliced garlic at the top. Pre-heat oven to to 400 degrees and bake for 30 minutes. Flip eggplant after the first 15 minutes. Serve with grilled chicken or on top of rice or a salad. Believe me you will be hooked!
