Sometime ago I (Carolina) lived in Spain for a couple of months, it was in my early twenties when I didn’t have a care in the world. I played, I shopped, I traveled, it was such a great experience, and most importantly I met some great people, and had some amazing food. One of my favorite dishes was frittata. When I returned to the states it was my mission to make this dish. My version is a little of this, and a little of that. This dish is full of flavor, and it can be made for breakfast, lunch, brunch, picnics, and as an appetizer.
