Quinoa salad is the perfect fulfilling salad that will have you craving for more. Not only is it healthy, it is full of flavor with bursts of zesty ingredients such as bell peppers, lemon and honey the key ingredient to balance out the recipe.
Take 1 cup quinoa with 2 cups of water boil together about 12 to 15 minutes. Before you make the salad the quinoa has to be cold.
Squeeze 1 lemon and grate skin, 2 cups black bean (I use 1 can) drain and rinse, 2 cups frozen corn (put in frozen), 1 diced red pepper, 1/2 cup diced onion.
Wisk together 4 1/2 Tablespoons of olive oil, 1 1/2 Tablespoons of red wine vinegar, 1 1/2 Tablespoons of honey (I add more) 1 teaspoon of chilli powder, 1/2 teaspoon of salt, a little black pepper, lemon juice and grated skin, mix all ingredients together and refrigerate for a few hours before you serve.
