I’m a sucker for garden cucumbers, kirby cucumbers, pickles which are basically in the same family and I especially like to eat them in the summer. As I was browsing the web for recipes that include cucumbers I knew I had to attempt to make this cold cucumber Asian Soup, it was refreshing, full of flavor, and it gave me enough energy to get me through the day it was recommended to eat it with rice which was the perfect side to fulfill my appetite. I always thought that the flavor of cucumber was very subtle, but after trying this recipe I realized how much flavor it produces because I was anticipating that all the other ingredients would overpower the cucumber, boy was I wrong! I will definitely make this again throughout summer and summers to come.
