I finally went out and bought a cast iron just to attempt to make Dutch Baby Pancakes and it was worth it. I love the fact that the recipe only requires 1/2 cup of flour and the recipe mainly consists of baked eggs. I used gluten-free flour from Trader Joe’s which I have been using lately it is a little pricey, but well worth the investment. Next time I will try to make them with only egg whites as they were a hit for both my husband and I. I especially like that we can share it.
